Ukoy is a popular Filipino appetizer. It's made of shrimp, mung sprout, eggs, flour, salt and pepper then fried it like patties. Then accompanied it with the simply delicious and flavorful sauce. It's crispy and crunchy deep it to the spicy vinegar with Thai chili is satisfying. It is also known one of the pinoy street food snack. Every corner during my school life vendors are just wait away and when the break time well you know where students goes, lol.
Anyway, here is my recipe for it. Been craving them in awhile now and husband went fishing he brought me some fresh shrimp some of them were still alive so how good is that? Timely had the mung sprouts so i hastily fix it for ukoy.
Need:
1/2 lbs mung beans sprout
20 pieces small shrimps
salt and pepper to taste
Frying oil
1/2 cup flour
2 eggs
1/4 cup corn starch
Combine altogether until well mix. Preheat frying pan. Then make a patty shape. Toast them until brown and crispy. That's all. Serve hot with vinegar mixture.
