CREAMY GNOCCHI WITH BACON AND PESTO

Ingredients (serves 4)
• 1 teaspoon olive oil
• 2 garlic cloves, crushed
• 1 brown onion, finely chopped
• 6 rashers bacon, rind removed, chopped
• 600g fresh gnocchi (see note)
• 2 teaspoons sundried tomato pesto
• 2 teaspoons basil pesto
• 300ml carton light cream
• 2 tablespoons light sour cream
• 1/2 cup grated parmesan cheese
• 1/4 cup basil leaves, torn

Method:

1. Heat oil in a saucepan over medium heat. Add garlic, onion and bacon. Cook for 5 minutes or until onion is soft and bacon is light golden. Remove from heat. Set aside.
2. Cook gnocchi in a large saucepan of boiling salted water, following packet directions, until just tender. Drain and return to saucepan.
3. Add bacon mixture, sundried tomato and basil pesto’s, cream, sour cream and parmesan to gnocchi. Stir over low heat until heated through.
4. Add basil, and salt and pepper to gnocchi mixture. Toss gently to combine. Spoon into serving bowls. Serve
.
